So, this morning energizer knows how much coffee drinking is a complex and nuanced experience: its rich and powerful aroma, its comforting warmth and the pleasure of the ritual of taking time to savor it. Coffee is unquestionably one of the most popular drinks in the world. But why do we like coffee as much? Because it makes us feel good. However, bitterness is not always a pleasant taste, and we usually try to avoid it. So, how to explain this contradictory love?

Bitterness and coffee: A link established?
In fact, according to a new study by researchers at Northwestern University and published in the journal Scientific Reports, coffee lovers are no less sensitive to bitter taste, on the contrary! Which indicates an interesting psychological phenomenon behind our love of coffee.

The team compared participants' sensitivity to three different bitter flavors: caffeine, quinine, which gives sparkling water its bitter taste and propylthiouracil, a bitter synthetic compound. The scientists then discovered that people whose genes were very sensitive to quinine and propylthiouracil tended to drink less coffee. On the other hand, those sensitive to the bitterness of caffeine tend to drink more coffee.

As a result, it helped to reduce fasting blood glucose and helped to improve insulin sensitivity and thus prevent you from developing type 2 diabetes.

Coffee protects you against Alzheimer's disease
Several epidemiological studies in humans have suggested that regular coffee consumption reduces the risk of developing or at least delaying Alzheimer's disease especially in the elderly.
